The word is suggestive of "whisky", which comes from the Gaelic "uisge beatha" or "uisce beatha" (literally 'water of life').

The word also bears a striking resemblance to Oushka, a term used for a type of Barley-based spirit (basically whiskey) in the fantasy world of Ethshar, developed by American fantasy author Lawrence Watt-Evans.

Presumably, Maize-oishka is therefore a whiskey made from corn, similar to Bourbon.

Oishka is also seen being consumed by a character in Dzur (book).
